Learn: Sushi making with Chef Robbie

At Milner Fashion House we absolutely love learning new skills and sharing our knowledge with anyone who wanders in - so it feels like a natural progression to start sharing that knowledge. experience and passion in a bit more structured way.  Beginning in January 2022 we will be hosting a fun selection of classes at the premises - everything from fashion to food! To give you an idea of what to expect, and to get everyone as excited as we are, we had a chat with the lecturers.

Next in the all-star line-up is Chef Robbie.  Robbie has been working in the hospitality industry since childhood and his sushi skills are next level.  He will introduce you to the equipment you need for sushi makingand help you master some of the basic techniques.  We dragged him out of the kitchen to answer some sushi making questions you might have.

MFH: Who will enjoy this class?

Robbie: Anyone who enjoys eating sushi, or learning new skills, or loves preparing food. We try to keep it fun and very relaxed - while showing you how some of the basic sushi shapes are made. If you are game to try something new, you will enjoy this class. The prospect of a sushi feast at the end of the night might also be a big motivator!

MFH: How advanced is the class? Should people attending have any cooking experience? What if I can’t even boil water.

Robbie:The class is aimed at beginners  - if you are confident around the kitchen it might help a little - but Sushi making is different to how we normally cook so it will probably be quite unlike what you are used to anyway. If you never ever cook - you can still do this.  We prepare all the ingredients beforehand so you will just learn how to assemble them. A pair of working hands is all you need.

MFH: Do I need to bring along any equipment? 

Robbie:No - we will provide everything you need.  It is a perfect try before you buy experience. Try it out in the class and if you enjoy it and want to continue doing it at home - you can get the equipment you need for yourself. For now, you just need curiosity and enthusiasm.

 

MFH: What techniques will we learn in this class?

Robbie:Like mentioned above I will be teaching you some of the basic sushi assembly techniques. You will be making some Maki, California Rolls, Nigiri, Hand Rolls and of course Fashion Sandwiches - if time allows we might squeeze in some more. All the ingredients are prepared beforehand so we can immediately get stuck in assembling some sushi. I will also teach you how to get a neat finish and give some tips on presentation and display.

Bio:  Katlego Robert Sithole started his career in the hospitality industry, right after high school, as a waiter at a catering company. In 2010 he started working as a barman at a Menlyn coffee shop where he met the owner of Cape Town Fish Market. Recognising his passion for the industry he offered to train Robbie in Sushi making - after which Robbie worked at the Cape Town Fish Market in Garsfontein. From 2012 he worked at The Boma in Alberton and Stone Cradle in Centurion. That is where he met Chef Shane Smit in 2013 who taught him how to cook and plate fine dining style. He moved to various restaurants with Chef Smit including opening the first Jamie Oliver restaurant in South Africa and eventually to the Serengeti Golf Estate restaurant
